Orange Tofu Salad & Orange Vegetable Soup

Orange Tofu Salad

INGREDIENTS:

Salad

  • Green Capsicum: 1/2 Medium Sized
  • Red Capsicum: 1/2 Medium Size
  • (Can take 1 full green or red capsicum)
  • Zucchini: 1 Medium Sized
  • Broccoli: 2 cups
  • Tofu: 2-3 cups
  • Olive Oil: 2 tbsp

Dressing

  • Orange: 1 (Large sized)
  • Chili Flakes: 1 tsp
  • Salt: Per taste
  • Corn Starch: 1 tbsp
  • Soy Sauce: 1 tsp
  • Honey: 1.5 tbsp
  • Water: 1/4th cup (Adjust if needed for consistency)

HOW TO MAKE:

Salad

  • Cut capsicum, broccoli, Zucchini and tofu in small pieces
  • Heat 1 tbsp olive oil in a pan
  • Add the vegetables and sauté for 5-7 minutes till they become tender. Keep the vegetables aside
  • Heat 1 tbsp olive oil in a pan and sauté for 3-5 minutes till they become light brown
  • Sauté tofu and salad together for 1-2 minutes and keep aside

Dressing

  • Add soy sauce, chili flakes, honey, corn starch, water to orange juice
  • Add salt to taste
  • (The dressing will be watery consistency)

Heat the tofu/vegetable combo right before eating and add the dressing. Keep mixing the dressing till it is absorbed. Will take about 3-5 minutes.

Orange Vegetable Soup

  • Serving: 4
  • Prep Time: 10 minutes
  • Cooking Time: 15 Minutes

INGREDIENTS:

  • Capsicum: 1/2 of medium sized
  • Tomato: 1 medium sized
  • Cabbage: 2 cups
  • Olive Oil: 1 tbsp
  • Pepper: Per taste
  • Salt: Per taste
  • Water: 2 cups (Adjust per consistency)

HOW TO MAKE:

  • Chop capsicum, tomato, cabbage
  • Heat olive oil and sauté the vegetables for 5-7 minutes
  • Add water and pressure cook for 3-4 whistles
  • Grind the mixture
  • Add salt and pepper to taste and heat for 2-3 minutes
